Baked Oatmeal Recipe

Have you ever tried baked oatmeal? I have made baked oatmeal ‘bars’ before, but never anything like this recipe I am about to share. Recently, on Instagram, I saw this baked oatmeal recipe and it looked delicious so I decided to give it a try. And wow, YUM. It is delicious.

I’ve been making a batch every night now for over a month. I triple the recipe and cook them in individual glass containers. One for my husband to take to work, one for my son for breakfast, and of course one for me too. All you have to do is pop it in the microwave for approx 45 seconds to heat it up the next morning, and you have yourself a delicious and HEALTHY breakfast.

Oh and this is also gluten free, dairy free and healthy too.

This recipe can easily be altered to your taste. For example, add a spoonful of peanut butter or nut butter of your choice to the center before you cook it. Or add honey, vanilla extract, fruit, nuts etc. Add pumpkin instead of banana or any fruit you’d like.

Ingredients

  • 1/2 Cup Oatmeal

  • 1 tsp Baking Powder

  • 1 Tbsp Cocoa Power

  • 1 scoop chocolate Protein Powder

  • 1/3 cup nut milk

  • 1/2 banana

  • Chocolate Chips (optional)

Directions

  • Combine all ingredients into a food processor or blender and blend until well combined and creamy
  • Grease your container and pour in mixture
  • Add 1 tbsp Chocolate Chips (or more to taste) and stir in
  • Cook at 325 for 15-18 minutes

Notes

  • This recipe can easily be altered to your taste. For example, add a spoonful of peanut butter or nut butter of your choice to the center before you cook it. Or skip the protein powder and add honey or maple syrup instead, vanilla extract, fruit, nuts etc. Add pumpkin instead of banana or any fruit you’d like.
